A simple, selective, rapid, and precise liquid chromatography - tandem mass spectrometry method has been developed for the identification and quantitation of porcine gelatin in food and pharma products. Candidate protein biomarkers were identified using Agilent LC-QTOF-6550 and confirmed using Spectrum Mill software with Uniprot protein sequence database.
